Mystic Hills Brewing: “Beer is the Star of the Show”

Mystic Hills Brewing, founded by Reanna Dembitsky, Michael Prusakowski, and Veronica Luyster, offers a uniquely immersive brewing experience where every detail exudes charm and artistry. Just minutes from Sprague Brook and Kissing Bridge Ski Resort, this scenic retreat captivates visitors with breathtaking sunsets and an inviting ambiance. DeliveryRank offers you an exclusive interview.

Could you share the inspiration behind establishing Mystic Hills Brewing and how your personal experiences influenced its creation?

Mystic Hills Brewing was born from a true passion for craft brewing and design. Michael, the owner, has always been an avid home brewer, experimenting with different ingredients and flavors long before starting the brewery. His love for brewing and bringing unique flavors to life became the foundation for Mystic Hills. Reanna, with her keen eye for eclectic, high-end design, was drawn to creating a space that reflects both warmth and sophistication. Over the years, I have collected various items with a rich history, which brought a distinctive personality to the space. The combination of Michael's brewing passion and Reanna's design vision came together seamlessly when we began dreaming up Mystic Hills Brewing.

How does the brewery's location on your five-acre property enhance the farm-to-pint experience for your patrons?

The location of Mystic Hills Brewing is central to our farm-to-pint concept. We’re fortunate to have a five-acre property where we can grow fresh produce to use in our beers. For example, the green peppers in our "Secret Garden Cream Ale" come directly from our garden, ensuring the freshest and most vibrant flavors. Our property also offers panoramic sunset views that are absolutely stunning, which adds to the experience. On warm summer evenings, our patio fills with laughter, creating a cozy and inviting atmosphere. The beauty of the property, combined with our farm-fresh ingredients, truly sets the stage for a unique, immersive experience for our guests.

Could you discuss the process and challenges of growing your own ingredients and incorporating them into your brews?

Growing our own ingredients is an exciting yet challenging aspect of the brewery. There are many factors at play, such as unpredictable weather patterns and pests, which can affect the crops we rely on. We've had to become adaptable and resourceful, learning over time how to work with nature to grow ingredients that will contribute to the flavor profile of our beers. Despite these challenges, it's incredibly rewarding to incorporate produce we’ve grown ourselves into our brews, allowing us to offer something truly unique.

How do you balance offering a diverse beverage menu, including wines and handcrafted cocktails, while maintaining a focus on your craft beers?

At Mystic Hills Brewing, we want to cater to everyone, whether you're a beer lover or not, but always with an emphasis on quality. While our craft beers are our heart and soul, we also want to offer something for those who prefer wine or cocktails. We've carefully hand-selected wines and crafted cocktails that match our high standards, ensuring they're just as exceptional as our beers. We even offer an extensive non-alcoholic menu for those who prefer a refreshing, alcohol-free option. It's about balance—providing a diverse selection while never compromising on quality.

Could you share the inspiration behind the eclectic design elements, such as the driftwood tap handles and antique oil paintings, and how they contribute to the overall ambiance?

The design of Mystic Hills Brewing is very much a reflection of Reanna’s vision and years of collecting eclectic and unique pieces. Growing up in West Palm Beach, Fla., Reanna also found a meaningful way to honor her hometown. The tap handles are made from driftwood from South Florida. The antique oil paintings were sourced to create a sense of timelessness and connection to the past, while still feeling fresh and exciting. Our goal was to build an environment that feels both familiar and elevated—somewhere you can feel comfortable and relaxed but also inspired. We wanted the space to have character and tell a story, where the ambiance adds to the experience of enjoying our craft brews.

How do you see the craft brewing industry evolving in the next few years, and what challenges or opportunities do you anticipate for small, independent breweries like Mystic Hills Brewing?

Sustainability is definitely a growing focus in the craft brewing industry, and we see it continuing to evolve in that direction. Consumers are becoming more conscious about the environmental impact of the products they choose, and small, independent breweries like Mystic Hills Brewing are in a unique position to adopt more sustainable practices. This could include using locally sourced ingredients, reducing waste, or finding innovative ways to minimize energy consumption. As the industry grows, there will also be more opportunities for small breweries to contribute to their local communities, enriching the culture and economy around them.
