Having taken courses in Thai, Scottish, British, Chinese and French cuisine, I can offer authentic dishes for guests who wish to have a specific dish on their menu. All of my dishes are made from scratch, using fresh ingredients at all times. Even with other cuisines, I always do a great deal of research to ensure that the dish I am preparing for my clients is as close to their expectations as possible. Each dining experience is unique as I work with the client to determine what they would like on their menu and give them some choices so that all the dietary requirements can be accommodated.
I have always enjoyed cooking and was able to gain a lot of experience whilst working in London from the chefs who were passionate about their food and happy to pass on their knowledge. However, it was family life that took me to start up my own business as I didn't want to be a stay at home mum but also wanted to be with my children when they were off school so the logical step was to set up my own business which has grown from strength to strength from the very beginning.
All of my recipes are tried and tested and I keep on adding dishes when I find one that really hits the mark. I use authentic ingredients when required - never using substitutes for spices and always using fresh herbs - many of which I grow myself. If I have to alter a dish for a particular allergy or requirement, I inform the client of this before I agree to make the dish and also offer a tasting if required. Rarely is the dish altered so much that it is far removed from the original.
I am consistent, reliable, contactable and everything is made from scratch - usually the day before or on the day to ensure maximum quality and freshness. I work closely with clients to ensure that we both understand what we are looking for and what I can offer and therefore we both know what to expect and a better working relationship.
Taking courses in various cuisines or specific courses such as game, fish, patisserie, etc. These courses are not only fun but so helpful to give you that little tip to get you much further. They also help me understand where my strengths and weaknesses are - for example, Italian cuisine is absolutely delicious but it is not my strong cuisine so I explain this to the client if they ask. The client is the person who wants to have everything perfect and I don't like to disappoint. I am upfront as to what I can and can't do and won't take on too much or something too complicated if I believe it won't be delivered to the best of my ability.
