As a Certified Specialist of Spirits, his journey into the world of Scotch began humbly as an amateur collector. But it wasn’t until he created his signature “Infinity Bottle”—a unique blend of rare and exceptional Scotches—that his passion truly took form. In this exclusive Delivery Rank’s interview, we sit down with Eric to explore how his commitment to perfection and his pursuit of the ideal Scotch led to the founding of Fior Scotch.

Your journey from a distinguished military career to founding Fior Scotch is fascinating. How did your time in the Marine Corps influence your approach to creating and running a luxury spirits brand?

The leadership and personnel management a servicemember picks up from their time in service is priceless.

The story of your "Infinity Bottle" is captivating. Can you share more about how that initial blending experience inspired your vision for Fior Scotch?

My first two blends were... perhaps too extreme for the average NON scotch drinker (too iodiney, peatey, smokey...).  I wanted to create a blend that would make everyone happy.  A little smoke, a little sweet.  I couldn't make anything too extreme (too smokey or not smokey).  I had to find that happy medium that everyone could appreciate.  

Creating a consistent and high-quality blend from an “Infinity Bottle” is a unique challenge. What was the most difficult aspect of recreating that original flavor profile, and how did you overcome it?

Accepting the fact that the blend was NOT going to come out 100% like what I wanted them to recreate.  The blend came out phenomenal but I cannot tell you in all honesty how close/far it was to the initial blend.  What I can tell you is that I really like ONE sample more than the others and that was closest to my blend and that was the sample I wanted them to recreate.

Scotch whisky often carries a sense of tradition and history. How does Fior Scotch honor Scotch heritage while also bringing something new to the table?

FIOR means "pure", "true" and even "pristine" in Scottish Gaelic.  I wanted my scotch to be... an example of mastery in simplicity, devoid of foreign flavorings.  One can say the Lion Rampart or the bottle are homages to Scottish tradition but I believe it is having a pure/clean/true product that makes it a true homage to its Scottish legacy.

After achieving so much in your military career and now venturing into the Scotch industry, what drives you to keep pursuing excellence and exploring new ventures?

"Drive" is what drives me to my next goal/venture.  Time enough to rest in the grave. I'll rest then. In the meantime I have stuff to do.
