Birrificio Otus was founded in 2015 by a pool of members following the craft beer revolution. My journey into the concept of this wonderful product starts from the achievement of my degree in an agricultural institute: my dream has always been to make quality beers. Subsequently, after an internship in an Italian brewery, I moved to England to work in two historic English breweries that only made cask beer. After my experience in this country, I moved to Sicily to work in another brewery, where the beer culture was completely different from what was previously perceived. Finally, having gained experience in this sector, I decided to "come back", moving to Birrificio Otus, based in Seriate (Bergamo).
First of all, I would like to emphasize that without the appropriate rigor and production rules, beer cannot be made. However, what distinguishes the different beers is certainly the creativity and foresight of the master brewers. They are two complementary aspects: without one of them, the other is nothing.
One of the most important elements in terms of rigor during production is quality control; while in terms of creativity, the goal is certainly to take the classic styles of the different beers, make them our own and try to modernize and improve them as much as possible.
The level of quality control present in our brewery can be considered excellent, verifying the chemical-physical and microbiological parameters of the beers. In addition, we have a good tasting panel related to the sensory aspects of these products, such as the careful selection of raw materials.
First of all, we always start from an idea of how a beer should be made, then go on to develop the product, using different malts, yeasts and hops, different types of water and implementing a process in order to obtain the best beer possible.
In terms of brewery level, the goal is to grow in the medium-short term, trying to reach from 7,000 to 8,000 hectolitres in terms of warehouse capacity, always remaining faithful to the methods of our production process. All this without distorting the nature of the product: for us the concept of craftsmanship consists of the quality of the raw material, process, creativity and enhancement of the territory.
In recent years, I have been noticing a trend in food & beverage that goes towards authenticity and the quality of products. As a result, I expect a steady growth of this industry in the years to come.
